Rachel and I went to a Asian Market to get everything we need to make Pad Thai. When we got there Roy, the helpful little asian man helped me get everything I needed.
He was really funny because he kind of went into detail about the different ingredients. He was super nice and when I left he gave me an autographed calendar.
The store was off Sears Rd. near Greenville Ave. Its super tiny and if you blink you may pass it. He gets most of his business from selling to Thai Restaurants wholesale, but he took time to help me with just the few items I need.
When we got home I made Pad Thai for a small group of people. It turned out ok, it was a little dry and could have used more palm sugar. I think next time I’ll soak the noodles a little longer. But for my first time I’d say it was pretty good.

be careful with that noodle-soaking, my korean roommate made food for us once and he was in a big hurry to get it served because he says theres a sweet spot for noodle consistency…not too tough not too squishy…p.s. im having problems seeing the whole page on the left side….troubleshooting tips?
